We think of cheese as an essential addition to Mexican food, but what is its exact place in Mexico’s culinary heritage? Some will argue that it’s not actually a traditional part of Mexican cuisine despite the fact that it’s everywhere now. Since National Cheese Day just passed on June 4th, now is the perfect time to take a look at the role of cheese in authentic and traditional Mexican cuisine.

Dairy Comes to the New World
The production of cheese depends on the presence of dairy-producing animals. Before the Spanish brought such animals to the New World in the 16th century, dairy was not part of the typical diet in Mexico. The introduction of cattle, sheep, and goats changed that, as the indigenous people of Mexico quickly took to cheese-making and added cheese to their traditional dishes.
Cheese Production in Mexico
Although cheese may be a newer addition to Mexican cuisine in the grand scheme of history, it’s certainly a major part of Mexican culture now. Mexico ranks tenth in the world for cheese production and eighth for cheese consumption. Most cheese producers in Mexico are small local operations, with only a few varieties being mass-produced. Most of the small cheese-makers use local raw (unpasteurized) milk, and each region has its own variations of cheese and cheese-making techniques.
Regional Cheeses
It’s almost impossible to say how many varieties of cheese are made in Mexico because there isn’t a set of naming conventions. Some regions make the same types of cheese but call them by different names, and in other areas, they might make a few different varieties that all have the same name. Many Mexican cheeses are fresh (not aged), and the most popular varieties of fresh cheese are queso fresco, panela, and asadero. These are soft cheeses that melt well, so they are often used to top dishes.
While many Mexican cheeses are versions of Spanish varieties, there are a few that are original Mexican creations. One of the most popular of these varieties is Oaxaca, which is named after the region where it originated. Oaxaca is a semi-hard cheese that is similar in flavor to Monterey Jack, but the texture is more like mozzarella or string cheese. You often find it in quesadillas or empanadas because it melts well and blends with the other ingredients.
